A simple, moist, and flavorful carrot cake recipe, paired perfectly with Whipped Cinnamon Cream Cheese Frosting.
Ingredients:
2 1/4 cups flour
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon warm spice mix seasoning
3/4 cup granulated sugar
1 1/4 cup brown sugar
1 1/4 cup vegetable oil
1/4 cup bourbon
1 teaspoon vanilla extract
4 eggs
4 cups carrots, peeled and grated
Directions:
In a small bowl, mix together the flour, baking soda, baking powder, salt, and spices.
In a separate bowl, use a mixer to mix together sugar and oil together.
Add the eggs, bourbon, and vanilla mixing until combined.
Once combined, fold in the dry ingredients and carrots, making sure not to over-mix the batter.
Pour the batter into three 6 inch or two 9 inch oiled parchment paper-lined cake pans.
Bake for 40-45 minutes at 350 degrees.
Allow cake to cool, frost, and serve.
Notes:
Use a grater or food processor to grate carrots to the desired size.
Store carrot cake in the fridge until ready to serve.
