To all my chocolate lovers, this chocolate poke cake is for you. Triple chocolate cake with Bailey’s infused dark chocolate pudding topped with whipped hot chocolate frosting. It's so decadent and delicious and super easy to make.
Ingredients:
Chocolate cake mix (I used triple chocolate cake)
Cake mix ingredients according to the box
3/4 cup mini chocolate chips, separated
2 teaspoons vanilla
3 1/4 cups milk, separated
2 packets of dark chocolate pudding
1/2 cup rum or Irish cream (Bailey's)
2 packages whipped topping (16 ounces)
4 packets of hot chocolate
1 cup semi-sweet chocolate, chopped
Directions:
In a large bowl, make cake batter as directed on the box, adding 2 teaspoons vanilla, 1/4 cup chocolate chips, and using milk instead of water.
Bake according to box directions.
While the cake is in the oven, make pudding as directed on the box, adding the Bailey's and extra pudding pack.
Remove the cake from the oven, and use the bottom of a wooden utensil to poke holes into the cake. Pour the pudding over the warm cake, filling the holes. Top with 1/4 cup chocolate chips and let the cake cool.
While the cake cools, combine the whipped topping and hot chocolate mix.
In a separate bowl, melt the chocolate.
Top the cake with the hot chocolate topping, drizzle the melted chocolate, and top with additional chocolate chips.
