It's Christmas Eve! That means it's time for one last cookie recipe. These are what my mom calls Frilliant Slices, not sure how the name came to be, but when she was growing up one of her neighbors shared the recipe and my mom has made these cookies ever since. Every Christmas my mom and I would make cookies together, since this year Christmas looks a little different and we can't make cookies together (in-person) I decided to try to make my version of "Frilliant Slies" for Christmas. They are shortbread cookies with candied cherries and walnuts-like fruit cake in a shortbread cookie, but better.
Ingredients:
2 sticks butter
3/4 cup powdered sugar
2 teaspoons vanilla extract
2 cups flour
1/8 teaspoon salt
1/4 cup candied cherries, chopped
1/4 cup walnuts, chopped
Directions:
In a large bowl, use a mixer to cream the butter and sugar.
Add the vanilla, flour, and salt and mix until combined.
Fold in the cherries and walnuts.
On a lightly floured surface, and form a rectangle, size may very depending on desired cookie size/shape. Cover and place dough in the fridge for at least 4 hours.
Cut cookies into 1/4 inch think slices, and place cookies on baking sheet.
Bake for 10 minutes at 350 degrees.
