I’m always looking for healthy-ish meal prep ideas and thought granola would be perfect to make in advance for breakfast or as a snack. I wanted it to be similar to Nature Valley’s Oats and Honey granola bars- simple, with just honey and oats, being soft but still crunchy. It turned out so good! It’s perfect with fruit and yogurt or by itself.
Ingredients:
3 cups old fashioned oats
1/4 teaspoon baking soda
1/4 teaspoon kosher salt
1/4 cup coconut oil
1/4-1/2 cup honey
1/4 cup brown sugar
2 teaspoons vanilla extract
1 teaspoon almond extract
Directions:
In a large bowl, mix the oats, baking soda, salt, and sugar
In a separate bowl, combine the oil, honey, and extracts
Pour the wet mixture onto the oat mixture, and mix until combined
Pour the granola onto a sheet pan and spread in an even layer
Bake at 350 degrees for 20-25 minutes, until lightly golden
Allow granola to cool and store in an airtight container
Notes:
The more honey you add, the softer the granola will be
To prevent granola from sticking, lightly grease or place parchment paper on sheet pan
