Granola

I’m always looking for healthy-ish meal prep ideas and thought granola would be perfect to make in advance for breakfast or as a snack. I wanted it to be similar to Nature Valley’s Oats and Honey granola bars- simple, with just honey and oats, being soft but still crunchy. It turned out so good! It’s perfect with fruit and yogurt or by itself.

Ingredients:

  • 3 cups old fashioned oats

  • 1/4 teaspoon baking soda

  • 1/4 teaspoon kosher salt

  • 1/4 cup coconut oil

  • 1/4-1/2 cup honey

  • 1/4 cup brown sugar

  • 2 teaspoons vanilla extract

  • 1 teaspoon almond extract


Directions:

  1. In a large bowl, mix the oats, baking soda, salt, and sugar

  2. In a separate bowl, combine the oil, honey, and extracts

  3. Pour the wet mixture onto the oat mixture, and mix until combined

  4. Pour the granola onto a sheet pan and spread in an even layer

  5. Bake at 350 degrees for 20-25 minutes, until lightly golden

  6. Allow granola to cool and store in an airtight container


Notes:

  • The more honey you add, the softer the granola will be

  • To prevent granola from sticking, lightly grease or place parchment paper on sheet pan
