I am always craving something sweet, and it can be so hard to find something sweet but still healthy. These No-Bake Chocolate Almond Cranberry Granola Bars are the perfect snack. I wanted them to be like the dark chocolate almond Kind bars, but with a little more protein. They turned out perfect, and surprisingly very filling making them perfect for breakfast, a mid-day snack, or dessert.
Ingredients:
1 cup almonds, roughly chopped
1 cup rolled oats
1/4 cup dried cranberries
3/4 cup semi sweet chocolate chunks, separated
1/3 cup honey
1/2 cup peanut butter
1 teaspoon vanilla
1 teaspoon coconut oil
Directions:
In a bowl, combine the almonds, oats, cranberries, and 1/4 cup chocolate.
In a separate bowl, combine honey, peanut butter, and vanilla.
Pour the dry ingredients into the peanut butter mixture and mix until combined.
Pour and press the granola into an 8x8’ parchment paper-lined pan.
Refrigerate for at least 1 hour, and cut into squares.
While your granola bars are chilling, place the remaining chocolate and coconut oil in a microwave-safe bowl and melt chocolate in 15-30 second increments until melted, should take no longer than 2 minutes. Stir until completely melted and smooth.
Dip the bottoms of the bars in chocolate; then use a spoon or plastic bag to drizzle chocolate on the tops of the bars.
Place bars in the freezer on parchment paper for at least 30 minutes until chocolate has hardened.
Store in an airtight container.
Notes:
For additional protein, add the preferred serving of protein powder to the dry ingredients before combining with wet ingredients.
Almond butter can be used as an alternative to peanut butter.
