Olive Oil Loaf Cake

A rich and moist lemony olive oil cake recipe that's simple to make.


Olive Oil Loaf Cake

Ingredients:

  • 2 cups cake flour

  • 1 1/2 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 1/4 cups sugar

  • 2 eggs

  • 1 tablespoon lemon zest

  • 1 cup olive oil

  • 2 tablespoons lemon juice

  • 3/4 cup milk

  • 2 teaspoons vanilla extract

Directions:

  1. In a small bowl, mix together the cake flour, baking soda, baking powder, and salt.

  2. In a separate bowl, use a mixer to mix the sugar, lemon zest, and eggs together until combined.

  3. Add the olive oil, lemon juice, and milk, and gradually add the dry ingredients.

  4. Pour the batter into a parchment paper-lined loaf pan.

  5. Bake for 35 minutes at 375 degrees.

  6. Allow cake to cool for 20 minutes and serve.

Notes:

For the glaze, combine 1 cup confection sugar, 1/4 cup melted butter, and 1/4 cup milk, mixing until combined and creamy. Pour glaze over the cake before serving.
