I feel like shortbread cookies are some of the most underrated cookies, but they’re so good and simple. I ran across a shortbread crust recipe when I made lemon bars a few months ago, and I loved the crust so much that I decided to bake these during the week as a quick treat. They’re so easy to make, only requiring three main ingredients, and they’re perfect for adding different flavors like fruit or chocolate.
Ingredients:
2 cups flour
2 sticks butter
1/2 cup sugar
2 teaspoons vanilla
1/8 teaspoon salt
Directions:
In a large bowl, use a mixer to cream the butter and sugar
Add the vanilla, flour, and salt and mix until combined
On a lightly floured surface, roll out the dough and cut cookies in desired shape
Bake at 350 degrees for 10 minutes
Note:
You can also roll or scoop the dough into balls for thicker cookies
