Celebrate mother's day and the first week of May with this sparkling strawberry kiwi cocktail. This is one of my favorite cocktails to make when I have gatherings because it's refreshing, strong, and has bubbles. The fresh fruit makes it sweet and similar to white wine sangria, but I add vodka instead of rum and prosecco instead of regular white wine.
Ingredients:
4-5 cups strawberry simple syrup
4-6 kiwi, sliced
1-2 cups strawberries, sliced
4 cups berry-flavored vodka
1 bottle of prosecco
Directions:
In a large pitcher, add the strawberry simple syrup, kiwi, strawberries, and vodka. Stir until combined.
Place the pitcher in the fridge for at least 4 hours or overnight.
Pour in prosecco when ready to serve.
Notes:
For strawberry simple syrup, combine 2 cups sugar, 2 cups water, and 2 cups chopped strawberries in a saucepan. Allow to simmer on low heat and stir until sugar is dissolved for about 10-15 minutes. Strain liquid and allow to cool before using.
